There’s more to brewing coffee than simply pressing a button on a coffee machine!

When a shot is pulled, the first perceivable taste is sweetness, then acidity, then bitterness. We create “brew recipes” so that the extraction achieves the perfect balance of those tastes.

Brew recipes take into account a number of variables, including grams of coffee (in the basket), grams of espresso (in the cup), and the brew time. Tweaking any of these variables can have a profound effect on the flavour of the coffee in the cup. (For example, recipes are set to within half a gram of coffee – and will typically be adjusted by the barista several times a day – depending on how the coffee is extracting at any given time).

Our barista academy trains all our teams in the science and craft of coffee. Social Impact Coffee Specialty Coffee Association (SCA) approved off-site dedicated training spaces and on-site coaching. This ensures that our barista teams have the skill levels and passion for service to match the quality of the coffee they’re brewing.
